200 g
Dark chocolate, (for alternatives, see the end of the recipe!)
180 g
Butter
2
Eggs
2
Egg yolks
70 g
Sugar
40 g
Flour
Bitter almond oil
Equipment
KitchenAid Artisan 5KSM175PS stand mixer
Hand mixer
Instructions
PREHEAT THE OVEN (210°C CONVENTIONAL (TOP/BOTTOM HEAT))
1.
Roughly chop the chocolate and melt it together with the butter in a saucepan over low heat, stirring until combined (don't let it get too hot!).
2.
Beat the eggs with the sugar until fluffy and add a few drops of bitter almond oil (if you don't like this "marzipan flavor", simply leave it out).
3.
Then add the flour and mix well.
4.
Next, stir in the chocolate-butter mixture.
5.
Grease the muffin tins well. The standard recipe makes approx. 9 small soufflés.
6.
Fill the tins with batter (about 3/4 full) and bake in the preheated oven for 10 min. Tip: No longer than 10 min., otherwise the center won't stay molten!
7.
Finally, carefully turn them out onto plates, dust with powdered sugar and serve immediately with a lovely scoop of vanilla ice cream and whipped cream.
Notes
You are welcome to make this recipe with milk chocolate as well; if you do, you may want to use a little less sugar.
If you like "white chocolate", then you will need:
200 g white chocolate
180 g butter
2 eggs
2 egg yolks
50 g sugar
40 g flour
80 g cocoa powder (simply sift it together with the flour)
