Instructions

Preheat the oven to 180 °C fan oven / grease the springform pan and dust it with flour

  1. 1.
Mix the flour, baking powder, sugar, vanilla sugar and salt (if you want it chocolatey, add cocoa).
  2. 2.
Using the hand mixer, start stirring slowly and add the eggs and oil little by little. Then stir in the mineral water (sparkling water).
  3. 3.
Beat the batter on the highest setting until it is smooth. Now you can stir in more flavourings as you like (lemon zest, lemon juice, chocolate flakes or similar).
  4. 4.
Pour the batter into the prepared springform pan (e.g. Guglhupf pan) and bake in the oven for approx. 45 min.
  5. 5.
After baking, let it cool on the wire rack for approx. 10 min. and then turn it out (if necessary, loosen the edge with a knife first).
  6. 6.
Once the cake has cooled, you can top it with a sugar glaze or chocolate glaze as you like. The cake can happily be baked the evening before, then it will be even juicier the next day!(in the pictures I stirred in lemon zest, lemon juice and chocolate flakes - delicious!)
