Instructions

Preheat the oven to 180 °C fan oven / grease the springform pan and dust it with flour

  1. 1

Mix the flour, baking powder, sugar, vanilla sugar and salt (if you want it chocolatey, add cocoa).

  2. 2

Using the hand mixer, start stirring slowly and add the eggs and oil little by little. Then stir in the mineral water (sparkling water).

  3. 3

Beat the batter on the highest setting until it is smooth. Now you can stir in more flavourings as you like (lemon zest, lemon juice, chocolate flakes or similar).

    Step 3
  4. 4

Pour the batter into the prepared springform pan (e.g. Guglhupf pan) and bake in the oven for approx. 45 min.

  5. 5

After baking, let it cool on the wire rack for approx. 10 min. and then turn it out (if necessary, loosen the edge with a knife first).

    Step 5
  6. 6

Once the cake has cooled, you can top it with a sugar glaze or chocolate glaze as you like.

The cake can happily be baked the evening before, then it will be even juicier the next day!

(in the pictures I stirred in lemon zest, lemon juice and chocolate flakes - delicious!)
