Instructions

Preparing the shortcrust pastry:

  1. 1

Preheat the oven (200°C conventional (top/bottom heat))

  2. 2

Mix the flour with the baking powder and sift into a bowl.

  3. 3

Add the sugar, vanilla sugar, eggs and butter. Mix briefly on the lowest speed, then on the highest speed until it forms a dough - important: don't let it knead for too long!

Tip: With cold butter the dough is firmer and easier to work with - your mixer just has to be up to the job! No problem for the KitchenAid!

If the dough is soft, simply put it in the fridge for 30 min.

  4. 4

Roll out the dough and place it on a baking tray lined with baking paper.

    Step 4

Preparing the topping:

  1. 5

Briefly stir the apricot jam until smooth and spread it over the dough.

    Step 5
  2. 6

Slowly heat the butter, water, sugar and vanilla sugar in a pot and stir in the ground hazelnuts.

    Step 6
  3. 7

Carefully spread the slightly cooled mixture over the apricot jam in portions.

    Step 7

Baking:

  1. 8

Slide the baking tray into the middle of the preheated oven and bake for 20-30 min. For me it's exactly 28 minutes.

    Step 8
  2. 9

The base must stay light in color!

    Step 9

Decoration:

  1. 10

After cooling, cut into strips and divide them so that you get elongated cookies.
